Storage Conditions
USDA recommended storage 45° to 55° F. (7° to 13° C.) 80% to 95% Humidity. Pineapples are subject to chilling injury and not well adapted to long storage. Pineapples harvested at the half-ripe stage will have a shelf life of approximately two weeks when held at recommended temperatures. Mature green fruit is more susceptible to chilling injury than riper fruit, and should not be held at temperatures below 50° F. (10° C.) Chilling injury will manifest itself as a dull water soaked appearance of the flesh, with a distinct darkening in the core. Pineapples which have been chilled are very susceptible to decays when removed from storage.
