Storage Conditions

USDA recommended storage 32° to 34° F. (0° to 1.1° C.) Approximate freezing point 31.1° F. (-0.5° C.)

Celery is highly perishable and should be precooled immediately after harvest to below 40° F. Commercial operations cool the celery by means of either hydro-cooling or vacuum cooling. Since celery is held and transported near freezing temperatures, freezing injury is occasionally seen at receiving point. Freezing injury manifests itself as a flabby water soaked condition of both the leaves and leaf stalks. Freezing injury may also manifest itself as circular sunken lesions on the stalk, which will soon become brown. It is important to note the location and stage of freezing injury, as the freezing injury may also have occurred in the field.
