USDA recommended storage 32° to 34° F. (O° to 1.1° C.) Approximate freezing point 30.6° F. (-
0.8° C.) Since cauliflower is stored and transported at near freezing temperatures, freezing injury and frozen cauliflower is sometimes seen in the market place. Cauliflower which has been frozen or exposed to chilling temperatures will be wilted and show water translucency on the green portions and a dry mealy curd.
